I Like Thursday: It's Cooking

Whew, it's been hot!

I like that our air conditioner works!  And I like that we had an extra one to loan to my sister so she wouldn't cook this week. 

When I had made the banana cream pie last week, I made three mini pie shells with the extra dough.  So what did I do for my first hot day?  I slaved over a hot stove making a small batch of banana cream pie custard.  Well, maybe not slaved.  But this time it set!  I had almost enough to fill two of the mini pies.  The second was a little skimpy, so I added a layer of chocolate.  I liked that a lot (and the other is in the freezer, to enjoy another day).

That evening I was back at the stove to make this one pot macaroni and cheese.  No boiling water.  Takes less than 20 minutes to make.  It may be cheater (without a real roux), but it's delicious.  So easy.  Gotta like that!  And not hot work, which was good when the outside thermometer was reading 90℉.

I like the purslane I seem to be cultivating.  I had allowed some to grow in a planter,  hoping it would grow indoors over the winter (nope).  I then planted sage in the same container late last summer, forgetting about the purslane (the sage also didn't make it).  I dumped the pot on the deck hoping the sage would revive, and instead, I have a pot full of purslane.  It has a nice crunch, a tangy flavor - I throw a bit in my salads.  Supposed to be high in vitamin C.  I give some to the guinea pigs as a treat.  It's loving the hot weather, although my rosemary plant doesn't seem as happy.

I'm stitching away on my Homebase quilt.  I really like the quilting (more than I expected).  It makes me think of a stream bed, with running water and pretty rocks.  I've finished the straight line quilting, I'm onto the free motion next.

  1. That mac n cheese recipe looks so easy, and sounds delicious! I'm going to have to try that! I know I have purslane growing in my garden, but didn't know it was edible. I always pull it and throw it into the bin with grass clipping and weeds! Maybe I'll try a bite of that, too!

  3. So I had never thought of cooking the macaroni in milk which kind of makes sense to do. I bet it is really creamy that way. But I'm with Mary I'd love a slice of that pie to go with it! I have never heard of purslane!! I will check it out.

  4. Hi Sally! I am back to enjoying a/c, and am so very thankful for it. I was a kid when we first got an a/c unit at my parent's house. It used to freeze up all the time - that's all I remember about it. Of course, my parents were near my age (59) when they installed in, so now I understand why they wanted it. Anyway, that mac & cheese look easy - I am going to have to give it a try. Dominic is a fan if you chop up the noodles well enough. Happy Thursday! ~smile~ Roseanne

  5. That pie looks delicious! My house AC doesn't work very well, but the one in my studio does, so I guess it's just motivation to spend more time out there!

  6. Hmmm. I didn't know you could eat purslane - I like a crunchy salad, especially one high in nutrients, so I will have to give it a try! Hope your weather cools down soon.
